These blades are comfortable hold to give you maximum leverage with oysters; must-haves for anyone who appreciates the history and beauty of handmade crafts, the utility of durable products and, of course, the joy of eating oysters!
Producing a quality oyster knife is certainly no easy task. It must be brutishly strong, yet also very nimble. It must also be highly durable, as it is expected to be able to endure the splitting of hundreds or perhaps even thousands of “oyster rocks” in the course of many years to come. It must light enough for a professionals to work it swiftly for hours on end and not tire of its handling weight. There are two key considerations in assessing the value of an oyster knife: Design – Is the overall design of the blade and handle optimal for the size and type of oyster destined to be opened by a particular opening method? Secondly, Quality of Materials – Did the knife-maker choose high quality materials or did he cut corners? Is the knife ready to go the distance with countless oysters or will all or part of its assembly and materials likely soon fail?

Railroad Spike Oyster Shucking and Cutting Knives

Hand-forged and turned oyster shucking knives. Each knife is unique and shaped differently according to the railroad spike curve.
Knives made from railroad spikes can cut most food items. A wonderful and unique gift for anyone.
Both oyster and cutting knives are created from recycled railroad spikes.

Disclaimer: The New Orleans Shucker blade is created in the workshop, not factory manufactured. There may be imperfections in the blade since it is hand-forged. All handles are made of natural wood grains which have imperfections. Handles are adhered to blades using various methods including glue and pins, heat, or solder; the handles are not machine manufactured.
